Pasta Sauce with Turkey Mince and Vegetables

I love pasta with a rich meat sauce. Only I do it a bit differently; using turkey mince and adding as many different vegetables that I can get away with! During the early stages of our relationship, Martin was extremely fussy with his food. He wouldn’t eat potatoes unless they were chips/fries, didn’t like bell peppers or anything green, didn’t like fish…the list was unless. This was when I started to cut up the vegetables really finely and add it to the pasta. Now, he eats just about anything :)


Ingredients:

300g turkey mince
2-3 cloves garlic, minced
1 chilli, deseeded and finely chopped
1 large onion, chopped
1 carrot, chopped
1-2 celery sticks, sliced
½ red pepper, chopped
½ green pepper, chopped
½ yellow pepper, chopped
1 courgette, chopped
½ tin chopped tomatoes
150g passata
50-75 ml red wine (opt)
2 tsp chilli powder (opt)
salt and pepper

Method:

  • Put the turkey mince in a bowl. Add the garlic, chilli, salt, pepper and a 1 tsp of oil (and chilli powder if using) to the turkey mince. Mix everything well and leave it aside while u chop up the other veg and prepare for the cooking ahead.
  • Add a bit of oil to a hot pan. Throw in the onions and fry for about 3 min.
  • Add the mince and fry that off (about 3 min).
  • Now add the carrot, celery, assorted peppers and courgette to the pan and fry away for 5-10 min.
  •  Add the tomatoes, passata, wine and leave it to cook for a min of 30 min.
  • Season with salt and pepper.

A variety of veg makes everything so colourful :)









Serve with pasta and a bit of grated cheese on top.










Note:

If you’re not using wine, you can add stock, more passata or tinned tomatoes instead.

If you find the sauce is a bit to tart (a problem I sometimes have when I’m using tomatoes), add ½ tsp of sugar to the sauce.
